postheadericon turducken and stuff

should you be desiring the flavor of a turducken on thanksgiving day (that is a turkey within a duck within a chicken), i saw one for the first time at whole foods last week. for realz!

also, i have a friend who, when she was a vegetarian, (she has since seen the light and now consumes the meats), ate tofurkey on thanksgiving.

it’s good to know there are options out there in terms of food for this time of year… holiday celebrations and whatnot. LOTS and LOTS of food options. traditional food items as well as “but my mom always made these…” items.

i cannot think of a holiday season that has gone by without my mother-in-laws “fuzzy balls.” yup. that’s what they’re called… “fuzzy balls.”

it’s ok, i giggle when i hear “fuzzy balls” too… in fact, i’m giggling right now just typing fuzzy balls multiple times.

yes, i am a 12 year old child.

anyway, they’re powdered sugar covered balls (hahaha!) of dough. in fact, i don’t even know what, if anything, is in the actual dough of the balls (again, hahaha!), but that’s not for me to know. it’s my mother-in-law’s thing… her recipe, and one that i know i will never be able to quite reciprocate so exquisitely, much like her homemade apple pie.

so i don’t even try. really, i don’t. i know my attempts will lead to nothing but disappointment and i wash my hands of the fuzzy balls (BWAHAHA!), leaving them to the expert.

my family… we’re of the chocolate-desiring-kind. we like fudge and those peanut butter cookies that have the hershey kiss on the middle of it placed ever so perfectly so as to NOT crack the cookie dough. my mom even makes these fudge mint brownies that are friggin insane. i will do ANYTHING for ANYTHING that includes mint and chocolate… except maybe give up wine.

anyway, these brownies are spectacular because they have layers… yeah, like multiple layers to them. so you can either bite into said brownie all at once, thereby experiencing the trifecta of flavors, OR you can be OCD like me and first nibble off the top layer of hardened chocolate, then the layer of green mint, finally getting to devour the brownie.

it’s madness, i tell you… MADNESS! (but the good kind.)

i have no idea how this post went from talking about turduckens to tofurkeys to desserts, but my point is this… i’m cooking for the first time EVER on thursday. thanksgiving dinner will be at our apartment, and it’ll be a small gathering of me, hub, the magoo, and our two fantastic friends. nothing fancy.

and yet, i’m scared shitless. i’m afraid of catching my apartment building on fire (which wouldn’t necessarily be a bad thing.) i’m scared of not defrosting the turkey at the right time, so it can go in the oven at the right time, thereby throwing off the timing of every other side dish that needs its own oven space.

we’re not doing a whole turkey. in the same way that i know i cannot tackle the fuzzy balls (LOL), i KNOW i cannot and should not even attempt an entire bird for thanksgiving.

so i bowed out of that one gracefully, discussed the bird with my friend and we decided to do turkey boobs. we will be cooking turkey breasts. yup. “turkey titties” as she and i have called them over the last couple of days that we’ve been menu planning.

why are we doing two?

A) they’re boobs. you do the math.
B) ya gotta have enough turkey for the late-in-the-day/early-evening sammich.

we’ll have an abundance of fixins, and even an apple pie.

fear not though, i am not making the apple pie… i cannot and will not even consider the craft and skill that it takes for one to make such a creation. my mother-in-law has that honed skill, as does my friend, who is making the apple pie.

i will be the one sitting in the corner with my glass of wine, trembling in fear of burning something, over salting something (cuz i love me some salt) or incorrectly measuring something because i do not read instructions.

  • A whole turkey is easy! I did the the math the other day and this is probably the 20th Turkey dinner I have made. NUTS I tell ya. But I still get a little nervous every time.

    Actually I have had a turducken… two to be exact (two different types). They sound better than they are, but they were a nice detraction from the standard turkey… however, probably wont do that again. Unless I make it myself. And considering all the work, not gonna happen.
    PS, you got it backwards… its a chicken inside a duck, inside a turkey.
    I make a killer chocolate pecan pie. In fact I just got a request for me to make one for the grand turkey day. Still not sure if I will have the time/desire to do it this year.
    Just an FYI… Apple pies are easy to make. But pealing and cutting up all those apples is a pain in the arse.

    Some of the Tur-Duk-Ens have a cornbread and andouille sausage stuffing, some of them have a crawfish stuffing.

    Although I LOVE crawfish, the sausage is better in my opinion. :)

  • I think mom makes fuzzy balls….are they also known as Mexican wedding balls or is it cakes?….that’s what mom always called them……It’s not politically correct though, I guess.

  • I was just thinking about just getting a Turkey breast because I don’t need the whole damn thing. And I don’t like dark meat. lol Wonder if I can still find one at the store.

    Actually Nic, the turkey boobs should be in your refrigerator as we speak to be defrosting. No more the days of setting things on your countertop for a few hours to defrost. By Thursday they will be good to go. Actually a turkey is easier – doesn’t dry out as much as turkey breasts. Wash, salt, pepper and put tin foil over the roaster pan and stick in oven at 350 for 3-4 hours. If they are big 4 hours max. Should be done in 3. Brush with a little butter in between for browning. Once or twice is fine.
    Enjoy your first Thanksgiving cooking. I miss doing the whole tday thing. I now go to my son’s and bring a ham because there are too many fricken people!! lol. It’s noisy, crowded and omg the food. Everyone brings.

  • They’re a little small for Thanksgiving, but our grocer sells turkey breast that will fit in your crock pot. Cook all day w/ some broth and enjoy – the nice part is no worries about drying out. Happy Thanksgiving!

    Easy Apple Pie (a big hit)

    *Your fav crust recipe or store bought works just fine
    *4-6 Granny Smith Apples (peeled and sliced VERY thinly)
    *1/4 Cup Flour
    *1 Cup sugar
    *Dash of cinnamon (we like a lot)

    Mix all ingredients and pour into bottom pie crust

    Pour 1tbs melter butter over apple mixture and place 2nd crust on top. Slice a few wholes.

    Bake @ 350 for 45mins – 1hr. My oven usually finishes in about 30 mins.

  • I am hosting my FIRST Turkey Day as Divorced. I am making homemade Mac & Cheese (something new for Jr. Mac), apple and onion stuffing, 2 pecan pies, and some other crap. But is my menu and my house. Oh, yeah my mom is buying and bringing the turkey. Enjoy the food, the family, and the fun. Don’t let the little shit throw your ass down. :) Lisa

  • One year I rubbed a Rosemary/Garlic seasoning all over my Turkey. Put extra seasoning on the breasts. It was SO good.I can’t just use butter, salt and pepper. This girl needs some flava in my life!

  • I am sure you will do fine and only burn the necessary parts of the apt building.

    I knew someone who made those brownie mint things and seriously they are to die for. I attempted them once, about 15 years ago, and I have yet to recover from the disappointment in myself.

    I would like to try some fuzzy balls.

    Oh I forgot to say put a little chicken broth or water in the pan first. You want the breasts to stay moist. I always use just water. The thing about a whole turkey is that it makes juices. Breasts are a little harder as they really don’t. If you are making dressing put that in as well. That’s what makes the good smell. Stove top is actually pretty good and makes a great smell in the oven. Just make sure it doesn’t dry out. That’s the key to all the baking of bird and dressing.
